Project description:

The object of the project was the adaptation of Polish bakery, cake and milling industry to the EU requirements in the scope of manufacturing technology, quality and food safety. Polish food producers were acquainted with the HACCP principles and with Good Manufacturing Practice, implemented and valid in European Union. Worked out the clues in the form of model documentation for the audit’s needs, conducting with regard to HACCP. Within the framework of the project was realized the movie “European procedures” as well as three handbooks were published: 1. Guide of Good Manufacturing Practice (GMP) for the cereal-milling processing plants 2. Guide of HACCP system implementation in the cereal-milling plants 3. Guide of Good Manufacturing Practice in cake and bakery industries The handbooks include detailed organisational and technical solutions for processing plants as well as practical hints for people responsible for hygienic state of plant in order to decrease to minimum biological, chemic and physic pollution.
